I know at concordia University (montreal) restauration was a major in art and a minor in chemistry, or the other way around. Anyhow, there was chemistry involved.
I'd suggest posting (a carefully phrased question) over on Studioproducts, if anyone has a good resource for this stuff it'll likely be them.

They do bite though, so try not to ask stupid questions or be easily offended.
FIT in New York has a restoration major, but it's primarily objects, furniture and interiors, not paintings. I also think NYU has an art restoration masters program.
