Convertibles are better for power. They have more RAM, slightly better core and a liiiiittle more screen size (they are often 12 -13.3 inches, tablets actualy are 10-11.6 inch with some exception 12 inches). If you plan on doing serious work, it's better to consider a convertible. They are not "that" big, it's okay to travel with one in your bag, but it's true they will not fit in a purse for exemple and can't be hold with one hand. You can add extra battery on them so battery life can be managed easily.
If it's for portability, tablets are fine and really slim these days, super easy to carry.
But again you have to do a choice between the atom core that will give you good battery life (arround 7-8hours) but are really not powerfull and the i5 core that will have better power process but less battery life (4-5 hours). With serious work on them, you can cut one more hour.
If it's only for sketching an android or an atom tablet is fine. If you plan to do more serious work or some 3D, consider the i5 core.
The old generation i5 core tablet (ep 121 and samsung 7 slate) are still good but they have a poor battery (arround 1h-2h autonomy while working :/) The current generation (microsoft surface pro and samsung ativ pro) have a better battery life (4-5h while working according to the review) but some issues. For exemple, the surface pro have no drivers for wintab softwares so Photoshop do not have any pressure information from the stylus... Artrage and sketchbook do not use the wintab drivers so these one will work fine, but if you plan on using photoshop you will have to wait.
I forgot to mention the dell 11, but it have a keyboard attached to the screen and is N-trig technology, but it's still a good alternative too.
As I said, nothing perfect so far...
