Im somewhat new to digital painting, and i want to create a portfolio/gallery soon. What do most artists start off with? I was thinking about doing the challenges, but this weeks almost over.

Do what you like doing. If you paint, then you have things you like to paint.

I can't tell for sure, but it sounds like you might be putting the cart before the horse. If you already draw and paint, you already have a body of traditional work to make a gallery/portfolio out of. Just because you are going to begin exploring a new medium doesn't change that. If you are putting your gallery/portfolio together for the purpose of getting work or getting into a particular school, the media won't really matter...the execution will.
As far as the challenges go, do some if you like. If you feel like the deadline for the current one is too close, wait a few days until the next one starts. No big deal. Paint some still-life compositions in the mean time.
As the ego shrinks, so the spirit expands.
