Can anybody recommend a site with female models in all different types of poses? Well, specifically, I'm looking for models in bikini-style poses but the more variety the better.

DeviantArt stock galleries (one of the few things they do right)
Character Designs.com
Pin Up Girl Clothing.com
That should be enough to get you started.

Thanks! I'll take a look.
Any good sites for male poses?
Not nearly as much, as you'd expect. There's some decent stuff in the deviantART stock galleries although you might have to dig a bit for it. There's also some stuff on the Character Design site, although again not nearly as many as female. Aside from that, there's this site I found a while back. You might find some decent stuff there.

The trouble with male reference is that almost all that you find is just a picture of the upper body. Kinda useless for studying the body or reference...
Also, there's allready a sticky thread for this stuff in the references forum.
