Im this may not be samurai/ninja film but i enjoyd Hero with Jet Li a lot. Swordfights and what not.
have you seen the Onimusha 3 game intro. id say thats one of the best choreographed CG intros ever. Oh theres sword fighting in it just so you know.
Akira Kurosawa has made alot of movies on the subject (Seven Samurai, Ran)

You can also search on imdb.com for Toshiro Mifune who was an actor in a couple of Kurosawas movies. He's probably done a shitload of samurai-movies.

One of my favorite fights in a Kurosawa movie is in Hidden Fortress, when Toshiro Mifune and the bad guy fight with polearms.

You can't go wrong with Kurosawa and/or Mifune.
If you liked Ran, check out Throne of Blood, Kurosowa's take on Macbeth.

there is a cool one i saw some time back..
think it was called Azumi..
dunno if it is released as dvd or vhs in USA but idled it and then dled a sub for it. worked well..
and the movie was kickass ninjastyle.. maybe a little exagerated some times but otherwise it rocked.
to me Yojimbo is better then seven samurai, even though its the same people and director...but someone already said that, so see THAT and Sanjuro, which is part two of Yojimbo saga...
NInja Scroll is a samurai classic, if you havent seen this anime you havent seen shit, and i mean the movie not the series
Shogun, well this movie is so fucking hard to come by, if you do its a 20 part series that pretty much breaks down fudal Japan in american eyes

If you like old-skool wuxia kung-fu cheesiness, I reccommend "Duel to the Death" - a film featuring a Chinese Swordsman and Japanese Samurai, inevitably mortal enemies who temporarily ally with one another to fight against a band of ninja who are kidnapping and executing noble families. The best way I can describe this film is that it's a bit like Ninja Scroll, only in live action. Cheesy, but highly entertaining and one of the more inventive and creative wuxia flicks out there. The story is actually pretty compelling, too.
