Regarding contracts

Okay.. really don't need to know this info right away, since I'm only still learning, but I thought I'd ask while the questions were in my head.

I skimmed through a few books on the business of art, and they all talk about making contracts and how you should ALWAYS have contracts for everything you do.

I was wondering how this applied to concept art. What's usually included in the contract? Is there anything you should ALWAYS ask for? Is there anything in the contract that changes from job to job? Do you make contracts just for freelance work, or is there some sort of contract you should have for in house work as well? If I decide to join a not-for-profit project, should I still ask for a contract to protect my work?

Any info, even pointing me to resources that I missed, would be appreciated.
