what pixel dimensions do you guys use? i usually go with 1620x2730 and was wondering if a bigger document would be better for detail and would it lag at that point?

Depends on your computer. I paint my pictures at 18x24 to 24x30 inches at 300 Dpi I have no problem with that size.
