The Okami artbook and game are still my favourites of all time. Worth every penny.
I have the Unreal Tournament 3 (Featuring our own Hawkprey), Grand Theft Auto 4, and Fallout 3 art books. Don't know how legal it would be to find online versions and post them though...
"Astronomy offers an aesthetic indulgence not duplicated in any other field. This is not an academic or hypothetical attraction and should require no apologies, for the beauty to be found in the skies has been universally appreciated for unrecorded centuries."
I'm a total Capcom art fanatic... I've always loved their character designs and artworks from Street Fighter to Darkstalkers to Megaman to Resident Evil--pretty much almost everything they release...
I own:
Capcom Design Works, The Art Of Gyakuten Saiban (Ace Attorney), Street Fighter Eternal Challenge

And I am SO buying the 20th Anniversary Street Fighter Artbook!!!...

LONG LIVE YOKO KANNO!!!
Yeah, Fallout 3 has an excellent art book. Morrowind's was also good, and it's been put online with Bethesda's approval: [1] [2] [3]
Crusader: No Remorse came with a number of interesting supplants, and while none of them were actual art books there were some great images. The news poster was particularly well laid out in my opinion.
I really like the story board cut-scenes in Max Payne 2, I just think it's a brilliant idea to present the story like that with the voice over.
I love the concept art Andrew Jones did for Metroid Prime.
Assassins Creed / Prince of Persia series....especially Lacoste`s landscapes/Designs n stuff. Artbook is also very nice.
Oddworld Abes Oddysea and Exodus , Silent Hill 2 / 3 , ICO etc.
When it comes to video game art, there's too much for me to mention...
As for Oddworld, too bad Oddworld Inhabitants isn't making anymore games. (I heard that they're doing movies now.)
Fun Fact: Series creator Lorne Lanning did most of the character voices in all of the games.

The art for Breath of Fire V: Dragon Quarter is FANTASTIC.
I've that book, the Japanese edition (book review here).
By the way, UDON is releasing the English edition in September 2009. It's on amazon but I haven't read it from UDON's blog yet.

I've a couple of video game art books. The text links go to my reviews with more pictures. Hope they are helpful.
I guess the one I like most is Okami.
In no particular order:
The Art and Making of Star Wars Force Unleashed
DarkStalkers Graphic File
The Art of Halo 3
Okami Official Complete Works
The Cinematic Art of World of Warcraft: The Wrath of the Lich King
The Art of the Video Game
This one has art from a couple of games.
Assassin's Creed Limited Edition Art Book
The Art of EVE
This one's very good for spaceship fanatics.
The Art of Mass Effect
The Art of Oddworld Inhabitants
Ashley Wood's The Art of Metal Gear Solid
Oh yeah!
Street Fighter Tribute
Udon's Art of Capcom
Exodyssey: Visual Development of an Epic Adventure by Steambot Studios
This book isn't really a video game art book, but it's video game enough.

The art of oddworld inhabitants from ballistic publishing. The art of age of conan, and assassissins creed are all some of the best I've seen. I got the last 2 with limited editions fo the games.
I simply love the art and the art style in Warcraft 3 and World of Warcraft
Just got this recently.
マスターアートワークス メタルギア・ソリッド4・ガンズ・オブ・ザ・パトリオット設定資料集 (Master Art Works Metal Gear Solid 4)

I got Exodyssey recently and it is so worth checking out.
They're not art books per say, but I love the traditional illustrations in the Osprey Publishing military history books. My favourite illustrator for them is Graham Turner. www.studio88.co.uk has lots of his artwork up.
I wish that there was an artbook to Taito Corporation's space shooters (e. g. Darius, Rayforce, Gekirindan, Syvalion, etc.).

I can't believe the art of Guild Wars and Guild Wars 2 hasn't been mentioned yet...
They have to be some of the best artworks for a game I have seen in a LONG time, especially the landscapes...![]()
That Wrath of the Lich King artbook's pretty good ^
recent purchase

Guildwars 2... the art book. No game art book has beaten it so far.

The publisher is the same, Insight Editions. After giving your post a second look and checking out your link, it appears that yours is a separate version that they've put out.
A couple of my favourites from this month
The Art of How to Train Your Dragon
Daily Zoo Year 2: Keeping the Doctor at Bay with a Drawing a Day
A Sketchy Past: The Art of Peter de Seve

Since we're not just doing game art, here's "Ray Caesar Art Collection" by Ray Caesar

I was fortunate to pick up a japanese copy of Syd Mead's Sentury in Korea years ago. Found out only later that his artbooks are incredibly hard to get and expensive.
It's one of my favourite artbooks I ownWish I had a chance to check his other titles as well...
I also recommend Sparth's Structura although it's kinda small, format-wise.
Hidetaka Tenjin's Valkyries is mindblowing for all the Macross/Robotech fans out there:
Some other good ones:
Akira Club
Girl who leapt through time artbook
Ghibli artbooks
Makoto Shinkai artbook
