Akira is actually one of the most amazing films I've ever seen, animated or not.
Whoah! been looking at some trailers and clips of some of these recommendations ( thank you kind dwellers of CA), can honestly say i am going to be poor from here on from buyin them all.
The animation is so good to look at and work out, real simple effects but used well giving off a much greater "detail", lighting in some of these scenes has so much depth and then u pause it and see its a simple effect just used really well! pretty cool shit!

It's been said, but Gurren Lagann is pretty great. It lies in the "brains off, balls out fun" category, but it does so with so much energy you can't help getting dragged along.
I think the best ones have been named already. Now you've got enough metarial to watch for the next few months...
I could maybe add "The girl who leapt through time" and the "Arjuna" series, which is way to green for me, but some of the rotoscoped animation looks really awesome...

also for those berzerk fans who still have a PS2 there was a game called Sword of the Berzerk which was based(loosely) on the series. I recommend playing through at east once.

There are 2 Beserk games. One was for Dreamcast, the other was for PS2.
The Dreamcast one picks up where Guts has just rescued Caska (I know her name is with a C in certain translations, I just think a "K" is sexier) and is taking him with her on his journeys.

Also whilst I'm at it does anyone find Naruto,... an okay show? I liked it till episode 1030, and then it just lost the plot. (Even if it explained it to me in painful detail, at every corner.)

I generally lost interest in anime series that are over 2 seasons (basically 50 or more episodes). That's also why I stuck with OAVs or movies for longer. I only liked Ranma 1/2 for 2 seasons barely enjoyed Sailor Moon, I only like Dragonball and hated Z (because I liked the adventure aspect). Z became "drag...ooooooon ball" it was ridiculous to see something like 20 episodes of a character charging up to do a big attack. They did that with the first Street Fighter anime tv series too.
Other good series:

'Street fighter 2 the animated movie' is rad as well has some of the most fluid fight scenes ive ever seen
some just plain cool ones are 'demon city shijuku' 'bio hunter' an the original 'fist of the north star'
Ranma 1/2 makes me feel sick how sexist that series was. Personally I think Takahashi is completely overrated, 2D characters, little plot development, along with artwork that varies in quality... (Though this is getting onto her Manga work, rather than the anime adaptations which look incredibly dated today.)

Hahahaha I was at this murder mystery dinner thing, and apparently the guy playing the detective did the voice for Void in Berserk. Hilarious.
Oooh and I don't know if it was mentioned but Kakurenbo (Hide and Seek) is pretty hardcore. The best part though is the downward scrolling intro sequence.

MONSTER - i got addicted to it.
GANTZ - action, boobs, splatter , psychology , cool designs, boobs...
MUSHISHI -its hard to describe in words the chill i felt watching it , it´s kinda very different of the most other animes out there...
gurren lagan- some of the coolest animation scenes i have scene.

Seconds Texhnolyze (I believe someone mentioned it earlier). It's a slow, cerebral anime at the beginning but once it picks up, things just get crazier. If you're into Lain, this will be right up your alley. It also has one of the best endings I've ever seen.
Mushishi is a must. So is Haibane Renmei. Check out Sky Crawlers, too if you're into dogfighting anime along with Yukikaze.

I just finished watching all of Cowboy Bebop the other day. It was very good. The setting along with the music is just perfect. It couldn't of been done better!
Now, some anime I would recommend:
Cowboy Bebop
Samurai Champloo
Animatrix (the varying art styles made for a cool effect. I also liked how they made the movie about multiple people's story with the Matrix)
Princess Mononoke (great creativity)
Howl's Movie Castle (great creativity)
Castle in the Sky (it's been a lot time since I've seen this one.)
I have yet to see Outlaw Star. A friend of mine says it's really good and could be compared to Cowboy Bebop.
I also have yet to see:
Spirited Away (all the way through)
Grave of the Fireflies
Ghost in the Shell (movie)
Cowboy Bebop: Knockin' on Heaven's Door
I'm also thinking of a movie I saw 4 years back. I have no idea what it's name was but the story's protagonist was able to manipulate paper as a weapon... I don't know if that helps at all.
Edit: It appears a rumor is going around that a live action Cowboy Bebop is in the making. I don't know if it is true, but if it is I'm excited for it!
